Cranberry Carrot Salad

One might not think that cranberries and carrots go together, but in our house – it’s a staple of MJ’s diet.

Cranberries have been shown to have amazing health benefits and MJ loves them – especially dried cranberries. She also really like carrots, and one day I wondered if I could put them together to make a sensory food experience and it worked. Now we have a healthy side salad that’s quick and goes nicely with sandwiches any time of the year.

Cranberry-Carrot Salad for 1

1 tbsp dried cranberries
1 small carrot chopped small
1 tbsp mayonnaise (we use Hellman’s as it’s the only dairy-soy free mayo we’ve found, besides making my own)
Optional: Handful of pasta to make it a pasta salad

Mix all ingredients together and voila a healthy textured sensory food experience of crunchiness, chewiness and creaminess!

You can scale all ingredients as needed to make this for more people as needed.
