Peanut Butter Oat Cookies – GF/DF

Oh cookies, how I love thee? Let me count the ways, I love thee with every chewy and sweet and crunchy bite.

Well today I bring you another cookie recipe. I swear we usually only make one batch of cookie per month because honestly the Monkey and I have no self control and could easily polish off an entire batch in two days times. Yikes.

Yesterday however was an exception to this because the Monkey asked to “help” me make cookies and this literally NEVER happens. And when I say this never happens I mean I have told Rebecca on more then one occasion that I was going to steal MJ from her so I can have someone to bake with. So when he asked to make cookies I was going to jump on this opportunity because he was showing an interest in something that I like. My heart jumped for joy and so although I was sick as a dog with a cold I got out ingredients and we started to create.

Chewy Peanut Butter Cookies – gluten/dairy free

1 cup natural unsweetened smooth peanut butter
2 eggs
2/3 cup brown sugar
1 tsp vanilla
1 tsp baking soda
1/2 cup gluten free oat flour
3/4 cup gluten free oats
1/2 cup peanuts or chocolate chips or combination of both
Preheat oven to 350 and line cookie sheets with parchment paper or use a nonstick cookie sheet.
Start by beating eggs slightly either in a stand mixer or with a hand mixer.
Add the peanut butter and brown sugar to eggs and beat on high about 1 min.
Scrap sides of bowl then add vanilla, baking soda, oat flour and oats. Mix well. Dough will be very firm.
Using your hands fold in peanuts.
Drop by round tbsp on a cookie sheet. Press slightly down slightly and mark with a fork. Bake at 350 for 8 – 12 min tmor till golden depending on the size of your cookies.
Makes about 32 cookies

These turned out a little too delicious and the Monkey and I probably devoured more then we should have the first day. I will cherish the moment I got  to share with him however because it was truly special to me.

  2. I just made these. Just heard Bob grab another one. I made a couple of adjustments for our food restrictions, but otherwise followed your recipe. These are good!
